I noticed that, once you've added words to your count, you can't take them off again. You can reduce your goal, but you can't reduce how many words you've written if, say, you shorten/cut a scene the next time you open your document before you start writing. This means that you have to write like crazy to catch up before you can use the tool again. Maybe it would be good to be able to insert minus numbers?

This is an interesting point of view. This tool is really to track the words you *wrote*, so even if you did delete them later, you still wrote those words.
However, I do want to accommodate different work-flows. I may introduce some kind of "negative sessions" to allow users doing what you suggested. That might take a while, though, as I'm working alone on this.
